Refried beans with good chorizo.

Here's how I eat them sometimes:
-make the beans a bit watery (by adding water)
-take totopos and break them in a bowl, filling it halfway
-add your watery beans and mix

You may add hot sauce, fresh cheese, and a bit of diced avocado on top if you feel fancy.
Also, the beans need to be a bit salty if the totopos don't have salt already.

Peanuts, yellow onion, red pepper, bella mushrooms, peanuts, asparagus, jalapenos and i used red curry paste. 2.5 tbsp to a can of coconut milk. Over jasmine rice. I like to simmer the curry paste in the milk before adding it to the chicken+veggies.

I made this one recently, it wasnt as rich. I blame a different brand of coconut milk. It wasn't as rich.

for the OP's curry it's just curry roux blocks that turn a basic stew into curry:

-slice onions, carrots, and potatoes (or whatever veggies you want/have) into chunks, same with whatever meat you're using (easiest and safest is boneless chicken thighs, trim away excess fat and cube them, don't forget to season the meat at this point)
-start your rice first (short-grain, you want it to be sticky) because that shit will take just as long as the curry
-oil in a pot, medium-high heat
-cook your veggies and brown the meats for a couple of minutes
-add the required amount of water for the roux block(s) you're using, substitute stock for a more flavorful curry or replace a bit with milk/cream for a creamier curry
-simmer for ~20 minutes
-turn off heat, add roux blocks, stir until well dissolved

It's extremely easy. If you have a knife and you can boil water you can make this.
