What is the best way to make chixken Wings to make them crispy? I don't want to fry them from raw since I want to use the oil for a few other things that week. I've seen methods where you bake them to temp and then fry them for crispness. Also a method where you sous vide them and then fey but that sounds like a lot of work.

the baking soda/powder (forget which) trick worked for me when doing them in the oven, just toss them with a little bit sprinkled on it, let it sit for 15-20 min and then bake until done

lowest-effort to highest-reward is the baking powder method
toss with baking powder and salt and allow to dry on a wire rack in your refrigerator overnight (the more you allow them to dry the crispier they will be! they will feel very strange after a night of drying before you cook them but this is what you want!)
bake at high temp on the wire rack for about 45 minutes, flipping once halfway through
much less effort than sous vide, almost as good as frying but without a lot of cooking oil to clean up afterwards

for oven, equal parts four, corn flour(or just corn four) tbsp of baking soda, salt, spice, thyme. stick in tupperware and add wings, shake. drizzle with canola oil and bake for 45mins @200c turning half way through

i dont use a rack, start thicker side down. you'll get bits stuck to the bottom of your sheet pan but that will scrub off easily with a soak

Another way to do the baking powd6 trick it if you don't want to wait overnight:

Mix as per normal then cook on low temp (250f) in oven to render fat for 40 mins then blast them at 400 or 425 for 20 mins. Crispy and juicy AF

I use a baking pan rather than putting them directly on the rack. I also spray a bit of canola oil on the pan and the wings, which reduces the stick and makes them fry up a little better.
