I could follow recipes all my life but I will never reach the level of the local curry place, they're just a family that runs a restaurant out of their house and is the most authentic and amazing tasting curry I've ever had and no matter what I do it's never the same.

Fried chicken is another good one. Frying anything at home is time consuming and wasteful, but chicken takes SO long that if your temp control is not on point you've fucked it up. I can buy a whole fried chicken fresh from the grocery deli hot for like $8 and it's very good. There's no way I'd ever make fried chicken at home.
Pizza is not one of these items, though. I'm a fantastic pizzaiolo at home. Got that 2-3 day cold ferment on the dough, got my baking stone, got my peel. The dough takes maybe 10 minutes total work over a few days and then the pizza itself takes 5 minutes to assemble and 5-7 more to bake.

I make breakfast burritos every once in a while in a huge batch for all of my coworkers. Over time I’ve started to transition into making everything at home instead of buying ingredients. I make the pico, shred the hash browns and cheese myself, make my own guacamole and taco sauce, the only thing I buy packaged is the tortillas. Last time I made burritos I gave a shot at making my own tortillas but I literally never bake so they came out as chips instead of tortillas.

I highly recommend just buying tortillas unless you’re a good baker or otherwise have a reliable technique. My idea was to make tortillas larger than any kind you can buy at the store but I realized I don’t have a griddle big enough anyway, so the largest I could make would only be as big as the regular sized store bought anyway.

Yes, this is true. But even if you factor in know-how, you lose the economics of scale. You’re now buying ingredients at retail price and you have to consider your time is worth something.
And that’s the thing. When even a place like Pizza Hut runs a deal, I can get a large unlimited topping pizza for $9.99 with zero effort on my part.
I can’t make a single homemade pizza, of comparable baking quality, with any toppings I want, for that amount, without having a ton of leftover perishable ingredients.
So I can either lose money on ingredients, or I can eat pizza every day for the next two weeks; even then, I may be breaking even on ingredient cost but am consuming my own time, which I consider a cost because I’m not passionate about pizza to consider making one a labor of love.
In the end, I’m still better off buying a pizza from a place that does nothing but produce pizzas.

I don’t understand why deep frying is getting so much hate. It’s really not that hard to pick up a cheap deep fryer from Walmart and google any kind of wet or dry deep frying recipe. The prep and cleanup amount to as much as any given mid-level cook’s time, dunno why people think that waiting until the oil cools and cleaning 3 bowls is as different as rigorously scrubbing 10 plates for a gourmet dish.

>> No.15667365

The thread isn't "things you hate to do" but rather things that aren't worth doing at home for the price/work. Deep frying is a lot more work while deep fried items are readily available and cheap in similar quality from restaurants or the grocery. The cost of oil and the hassle of filtering oil at home alone is enough to be prohibitive when compared with the ROI.

Well the topic of the thread was “not worth the time and effort being homemade.” So on a technical level, no, ingredient cost wasn’t mentioned.
But I’ll also correct myself; I have yet to meet anyone who brags about their homemade pizza, whose pizza I’ve actually tasted, and find it to be better than a “good” pizza place. This goes even moreso toward the double nigger I was actually responding to, who literally said his homemade pizza surpasses “wood-fired” places. I'm in the opposite camp. I've never had hummus as good as my folks make, and I've looked fairly hard.

Homemade bagels are the thing ITT that really sticks out at me. Never made 'em, never even seen someone make a bagel in their domicile.

For the effort, smell, and cleanup the restaurant deep fryer is GOAT. Like french fries really good example. They're just better in a restaurant deep fryer and quicker. Hash browns are the GOAT home made tater food

Almost always just as good as the store bought stuff.

The only reason to do it yourself is to show you can and have peace of mind on what goes into it.

came here to say yogurt
i assume it's just the quality of milk available here but i've yet to make a batch of yogurt that didn't taste off. then by the time you're strained it to your desired thickness you've already spent $5+ on milk and a day and a half of passive preparation for the same yield and low-quality product.
still want to perfect making yogurt at home one day, seems like a satisfying and fun task to have in rotation like baking bread or making pickles

My gf makes homemade bread which would be pointless to a lot of people. I love bread & butter as a late night snack though so it’s worth it to me but if I were just making sandwiches I’d buy bread.

I have made homemade laminated puff pastry and rolled them into home made croissants and they were so much better than a store bought croissant I will never want to go back. Phyllo dough though, I would never make that shit. Store bought phyllo any day.
