Why do people try to pretend authentic Italian pizza is best? Is it a giant cope?

>be poor Italian, living in near extreme poverty
>very little to eat/very little food available
>make a small piece of dough and stretch it as thin as possible to make it appear larger
>can't make a thick tomato sauce, due to lack of tomatoes, so i add water to get enough to cover the dough
>add 3 pieces of cheese and 1 basil leaf. I cant afford to add anything else

>see Italian pizza. Decide to improve it because I'm not living in poverty
>make the dough a bit thicker and larger

Italian American here who has visited the motherland a couple of times.

It all has to do with classism. It is seen as vile to eat garlic in any form where it has discernible taste in a dish, since it gives you a terrible breath. Garlic breath is legitimately an indicator for a simpleton, a peasant, a subhuman over in Lombardy. On that note, adding additional ingredients to traditional recipes not only is sullying the divine traditions, but is also similarly a peasant radar. It betrays (in their eyes) a ravenous animal looking to fill their belly. It's also why having more than one food type on a plate (say, having a steak and broccoli together) is distasteful. I wish I were joking.

I fucking hate Italians. (particularly Lombardy niggers)

OP is onto something. Traditional Italian cuisine is pretty much "as cheap as you can get it but even cheaper". Pasta topped with wild horseradish, because it was free. Topped with almonds, because those were easy to steal from the farmer.
All polenta dishes are essentially despair-tier subsistence food. Corn was grown in Italy only to feed poor farmhands, so the well-off farmer could earn more profit on his wheat and other serious crops.

Even if you wanted to do these dishes "authentic", what you would do is go outside and find wild edible plants to top the pasta with, possible even to adulterate the flour with, and other free/near-free ingredients. Not a bad starting point, but no need to cook like this if you can afford cheese and meat, which I believe all posters on this board can.
