15606628 No.15606628 [Reply] [Original]

For me, it's over easy, flash fried in a copious amount of oil until crispy, and copiously salted in the pan.

To serve eggs without salt, in my opinion, is haram.

Also haram:

>overcooked boiled eggs
>Any amount of uncooked egg white
>Coarse black pepper has been ground into the egg while cooking giving it horrible black streaks of peppery flavour.
>Pepper in general. People very much overrate black pepper. It is NOT a seasoning for everything.
>Scrambled eggs in general are not good.

How about you, Anon. Post your favorite ways of serving and eating this God tier food, that is, the humble chicken egg.

I'm exactly the opposite with my fried eggs. Don't like any crispiness. Eggs should not crunch. Honestly, I'd rather have them done in a non-stick pan and lightly steamed with the lid on an a tablespoon of water. Salt should be applied while cooking, pepper afterwards. The only exception I'll make is for anything with a runny yolk - it's fine to lightly salt it once you break it. Scrambled eggs are usually the most likely to be sub-par, but I've had some absolutely sublime scrambled eggs and I can't discount them entirely.

OP here;

I should also add;

Some of the best egg I ever tasted was Thai street food omelette on rice, Khai Jeow. This very much deserves an honorable mention.

Here is a video on its preparation.
Key is dropping the egg into the hot oil from a 1 foot height.

OP here;
I respect your digits and I respect the soft-egg crowd in general, I feel we can coexist respectfully.

Let's add more details about an ideal omelette.

>1:1 yolk to egg ratio
>NOT whipped or bubbly
>NOT whipped or bubbly!!!!!!!! It ruins the flavor.
>NO water or milk added. Why do people do this????
>Lots of butter, medium hot pan, do not brown, typical omelet instruction.

To my taste it's so important not to make an omelet bubbly. This is haram.

For me, it's medium high heat for fried, cooked in butter. The trick I've never seen anyone do is to crack egg(s) in pan and immediately break the white sac with the edge of the spatula in several places. This lets the white thin out and the yolk remain pure liquid. Give it a quick flip and season with Tony Chachere's. Serve on sourdough bread that's already buttered and thinly marmaladed. As my Grandma said, the Tony Chachere's gives them a little oomph (shaking fist in air). For scrambled, it's basically Gordon and MPW-style on toasted pita that has a smear of mayo and the fresher Mexican restaurant style salsa.

Cook slice of bacon until crispy. Remove it to chop/crumble into bits and turn down the heat.
Three eggs, lightly beaten together with salt, into the same pan. Add the bacon bits to the eggs after a moment. Scramble until mostly set but still a little wet.
Serve with a slice of rye toast, coarse black pepper to finish the eggs and bacon.
