Because years ago, it came out that way naturally, something to do with the bacteria in one cave versus others. It was such a commercial success that this was replicated in the following years through today. Today it's coloring added, back then, it was actually a different bacteria. Taste was apparently the same as the white version too.

Unfortunately there are still a few European cheeses that use annatto for color, and sometimes people accidentally buy them and have to suffer a painful assault on their tastebuds.
