please help me /ck/ i am losing my mind. out of the 5 brat package i bought the other day, only 2 remain that have not been undercooked or wasted. My most recent brat, I followed the instructions i read online very closely. I let it sit in hot (not boiling) water for 10 minutes, then took it out and pan fried it for a few minutes to brown the outside. After that I checked the middle and it was pink as fuck. So i straight up boiled it for 5 more minutes, put it back in the pan for 5 minutes, and its still fucking pink. Every time I hype myself up for a tasty meal with some good beer kraut, i spend around 20 minutes preparing a single sausage, and it just fucking breaks my spirit. I gave in tonight and just ate the brat with some pink in it. I didnt want to burn the outside like in previous attempts and still have the fucker pink. What do I do. I cant go through this again with the other 2 brats.

I always have a side dish and cook the brats in it. For instance, I had some "italian sausage" style brats recently and I made some italian beans & greens (cannellini beans and escarole in tomato sauce) to go with it.

It doesn't take that long. The only prep you have to do for that hominy dish is cutting the onion and pepper, but you could skip it if you were lazy.
Anyway you could easily get frozen vegetables and some kind of canned sauce, broth, beer + shredded cheese, whatever.
A brat is already not that quick and easy because it does need to be both simmered and grilled, so anything extra you can do within that cooking time span isn't much added effort.

If a sausage is raw/fresh, I pan fry it in oil first, then add some sliced onions, or jarred or fresh drained kraut or both. You, in your paranoid concern could even butterfly them to brown the insides. I warm through the sausages with onions and kraut, then I add some deglazing liquid, from broth to beer, maybe wine or cider, or even leftover coffee, bring to boil scraping up any browned bits, immediately reduce to simmer, lid on about 15 minutes on simmer to suck up the flavors in the liquid and yes, to get well done and tender. Are you not covering it? That's the kind of heat you want to come to a safe temperature, or a slow simmer. I always braise and cover sausages.

Anyway, at this point, you can remove them to a cutting board, one by one to further slice them into coins if desired and return to the pan to sizzle up the exposed ends if I want to recrisp the guys.

With brats I typically keep them frozen, as I buy them in larger packs. From frozen, I typically lightly boil for around twenty minutes while I work with onions in another pan. Carmelize, fry, whatever. When they are very firm and grey, I pull them out of the water and pan fry at medium heat on all sides. Put into a nice toasted bun with mustard and the prepared onions. It's real good.

This is my technique OP and it's never failed. Get your pan nice and hot and give those brats a sear on the outside. Then turn down the heat, add some water and put the lid on. I've never timed it, I just cook them until they look done. When you get older you'll be able to tell when food looks like it is done cooking.

I have decent luck just pan frying.
Medium heat, 4 minutes a side, flip 4 times.
Try and put a raw side down, obviously, but they're smile shaped - 2 of the sides will be tricky.

If you're working in a skillet or frying pan, you can add about 6 ounces of beer when you flip the final time and cover it (with either a "proper lid", or just set a baking sheet over to trap the steam in). If adding beer, just keep cooking and flipping every 4 minutes until the beer evaporates.

Best way is grilling them. Using the oven grill also kinda works, but they tend to come out drier. Electric grills also work kinda well. Pan frying is kind of a pain in the ass, because the fat sprinkles all over and the sausages just get brown on the spots they touch the pan. Bratwurst is never boiled in Germany though.

You aren't supposed to make Bratwürste in a pan but a grill. Now that we have this out of the way, you are left with two posible solutions.

Either you simply use a smaller flame till they are done and only tun up the heat for the last couple minutes or, themore widely used way, is to simply turn up the heat and put some water in a pan with a lid. You're basically steaming the sausage like a Bockwurst. Once it's done you take off the lid, put in some clarified butter and fry till brown enought.

Just because Bratwürste are a quick meal, that doesn't mean that you can just hrow them in a hot ass pan and expect edible oucome after minutes. It's quick in terms of a homemade meal, where you make dinner in 30 instead of 90 minutes. In the meanwhile you are supposed to make some potato salat or krautsalat to go with it.

German here.The best way besides grilling on traditional charcoal is this:

- Put Bratwurst on some aluminium foil on a baking tray.
- Place it in the middle rail of your oven, not higher!
- Switch on the glowing electric thing at temp 220°C, which we call Grillschlange in Germany, used for gratinating.
- Wait around 5 to 7 minutes until the bratwurst has a nice appetizing gratinated brown crust.
- Open oven and turn Bratwurst to other side.
- Wait another 4 minutes until they have the desired "tanning".
- Enjoy


Pros:
- wonderful even tanning
- if wished, Bratwurst gats some traditional delicate crispy rifts
- no pan needed
- no extra frying oil/butter fat needed
- no fat splashing in the kitchen
- nearly no washing up needed
- comparated to frying in an open pan relatively low smell and fumes in the house

P.S.: Never, never boil Bratwurst before frying it!!! Not with fresh raw bratwurst from your local butcher. Not with vacccumized, pre-cooked Bratwurst from supermarket!
