the dilema you have is that they're so thin so by the time you've seared them, they'll be almost cooked through, and putting them in the oven is the only way to have them evenly cooked through and to render more of that fat.

The solution
>salt both sides generously and rest on racks overnight to dry out
>reverse sear (cook in the oven at very low temps, like 140c until they're to temp
