The sauce is a curry spiced roux, there are no carrots cooked into it. Throwing some large pieces of carrots in for the last twenty minutes does not suddenly make it a carrot sauce - there's almost no carrot flavour in the sauce.

Use a good stock instead of water. Add aromatics like garlic, ginger, chili and diced onion. For sweetness add honey or grated apple. Add a little tonkatsu, Worcestershire or soy sauce sauce. My curry never tastes the same cos I experiment with different additions but it always tastes delicious.

liquidy dishes like soups, stews, and curries are all similar in that many call for a meat broth or stock as the base, or a vegetable broth as the base.

If your shit is just curry blocks and water, you're fucking up. I start my sauce with butter and grated onion, grated carrot, minced garlic, and minced ginger. Toast for a couple of minutes, then add chicken stock and bring to a boil. Add half a grated apple, your curry blocks, and cook at a simmer for ~10 minutes. Add a grated potato and curry for 10 minutes more, allowing your sauce to thicken. There's your base curry sauce, feel free to add soy sauce, worcestershire sauce, or something like sambal for some heat.

I just made some a few hours ago and it was the best I've ever made. Some good quality soy sauce and browning everything in one pot before adding the roux makes a huge difference. Also, use stock instead of just water. Would have added some xiaoxing or rice wine vinegar if I had any.
