Because I promised each duck I slaughtered that they wouldn't go to waste.

The head has perfectly edible meat so I roasted, stewed, then fried the duck head. It only looks burnt because i put a bit of maple bourbon syrup on it when frying to caramelize and crisp the skin. I'd like to learn how to braise duck heads someday like in pic related.

The neck, tongue, cheek, eyeballs, and brain are edible. The skin is also edible.

There isn't much meat but the little there is I find quite good, though for some reason some brains taste better than others. Still don't understand why.
I eat everything except the bill and bones. I compost the rest.

That is way too much work. I slaughtered a bit over 20 ducks this year, and when I butchered them I separated out certain parts. Duck heads, feet, necks, and wing tips went into their own separate bag so I could prepare them all at once.

Not to mention it wouldn't really matter. Duck brains are incredibly tiny.
