Have you tried any? Any one you want to try in particular?

Personally I try to eat ox liver at least every other week. If you have a piece of ox liver, there will be certain things you need to remove like the "membrane" around it and certain things inside, forgive me for not knowing the english name. Make slices of it and fry on very high heat. You want it to be not more than "medium" inside. If it get's cooked too much it gets though and it's the cooking that creates the "livery" taste. I like it best bleu/rare or at max medium rare.

You should have already softened onions in very thin slices before you start this. The onion compliments the liver perfectly. You don't need more than salt or pepper, but some sage is great too.

Sweet breads are a whole different thing and is really delicious with no offal taste at all. It will melt in your mouth if prepared right. My favourite is grilled sweet bread on charcoal or wood. This is not cooked to a doneness like medium/well done etc, it needs quite some cooking.

Alternatively you can fry in butter and finish off with adding finely chopped shallots and flambée with cognac.

Organ meat is really good, I hope you get into it and enjoy it as much as I do.

Liver pate.
Simple, delicious, easy.

I sautee liver in a good amount of butter, salt, pepper, any spices of your choice, save it all, put in in a mixing bowl/blender) with chopped mushrooms (I like baby portabellas but any flavorful mushroom will do) and chopped onion and garlic (all raw).
Then blend, chill, and serve with carrot sticks, celery, crackers, on toast, basically any way youd eat hummus.
It's delicious as shit.
