If you do it "right", it's great. I've found it's a type of cuisine that does not do well with workarounds or shortcuts, and not every single ingredient is easy to find in other countries.

Here's a list of things I can't find easily that I've tried to substitute for, and the result:

Tried a few different types of mint (purple, peppermint, etc), basil, nothing works right. I've heard this labeled as "beefsteak plant" or perilla, but never encountered it.
>katsuobushi
Tried dried anchovy for daishi. Not the same.
>mirin
Tried dry sherry. Tastes mediocre. Can't order it online because it's alcoholic, and no local liquor stores carry it here.

Can get it dried here as well as fresh, but both are expensive and require searching. No other shroom flavors come close to matching it.

Japanese food is great, but it's also very widely appealing and doesn't challenge Western palettes. It doesn't have a lot of distinct aromatics or sharp/spicy flavors, most of the appeal is in finely developed umami flavors. Because of that I find it kind of boring to eat several days in a row.
