Pick the bones out that you can see. Salmon steaks don't need much seasoning. Oil, garlic and sea salt go a long way with them. If you wanna get fancy, add soy sauce, lemon zest, and parsley to that and marinade for a while.

Yeah the cold kills it. Thats why you have to freeze the fish at -4f or less for 25 hours or more. Obviously you can't do that at home.

Pretty sure in the US at least, the FDA requires all fish to have been frozen to kill parasites before being sold. "Fresh" fish at US supermarkets have been flash frozen then thawed, but modern industrial flash freezing doesn't impact the quality that much.
