You can make a tasty soup from bread. I've had it a couple of times recently when I was hungry and couldn't be bothered to make something. Cut up three slices of bread, put it in a pot with some stock and herbs. Takes five minutes. Finish off with a nob of butter, salt and pepper and you've got a cheap and filling lunch.

I wouldn't say it's trendy. Most people probably only buy or make it at Christmas in England. It's just people back in the day used bread so often to thicken stews and soups when other ingredients were sparse, that they still wanted it around on the table when lifestyles improved. So if you have some meat for diner but only a stale loaf, you can use it to make bread sauce to accompany it as source of carbs.
