Just cook stuff he likes already. Occasionally slip in the adventurous menu for funsies. People can get to a certain age, esp a parent, and by all rights be able to only eat what they like to eat. If they want to eat fried tendies and pull off 80% of the coating, and it's the way they want to eat it because it's healthier? Then, whatever. There's plenty of chain restaurant food menus you can make the same, if not better. They're not all shit items, but tailored to appeal to people to eat there. I can make paper thin onion griddled white castle copycat burgers at home with really good oven fries, some nice house salad with homemade dressing, as much as some steaks, meatloaf, or roasted turkey. Just cater to him for a bit and see if it's worth it. Hone your diner food and sunday roast skills. Stop all Asian food nights, all foreign everything, and give it a rest on the impress your palate, and just cook really good food, really well. Load up your mashed potatoes with garlic and butter, and more salt than you'd like, and serve veggies the way restaurants do, well seasoned.
