Just keep it greens only and a light dressing. You can find some good ones for 30cal/2tbsp. Picrel is pretty darn good. I hear some people even marinade meat in it.

I'm a diabetic and currently on a 1800 calorie a day diet. I received a diet manual from the hospital when I was originally diagnosed as diabetic.

I am supposed to eat two servings of vegetables per day, but according to the diet manual I received from my hospital, only cooked vegetables count toward my daily dietary requirements. The manual specifically said that I count eat as much raw vegetables as I wanted.

Salads are usually made up (mostly) of raw vegetables. The things you have to consider when making a salad is the dressing and any non-vegetable or cooked vegetable content. Otherwise, add as much raw vegetables as you want.

Essential? You can make pretty much any salad, barring something like taco or potato salad, and just not drown it in fatty sugary sauces. Mustard-based, vinegar-based, and chili-based sauces are all negligible in calorie count. What exactly are you looking for.

you could probably use any of pic related and make a dressing with a small amount of oil, maybe even bone broth, along with a lot of seasonings and a full plate would be about 150-300 calories, although im not sure why you'd want a low calorie anything to begin with if you're from fit

Leafy greens
Veg
Fruit / berries
meat/avocado or other substantial
Nuts + seeds
Vinaigrette (3 tsp olivol, 1 tsp balsamico, 1 tsp honey, 1 tsp dijon, saltpeppah) less is more, you just want to coat it without leaving a lake in the bottom of your bowl.
