You have no access to dried chiles? What are your main capsaicin sources out there? You can use any beef that has good connective tissue that will breakdown during braising. Ground beef can be used but that’s boring. How else can I help?

Brown Ground Chuck with diced Green Bell Pepper, Onion and Garlic, drain grease, add 1 small can tomato sauce, 1 can diced tomato, salt, pepper, chili powder, pepper, Stir. Fold in 1 can Dark Red Kidney Beans that have been rinsed off in a strainer, Add Bay Leave. Cover, Simmer , stir occasinally. (Basic Bitch Betty Crocker recipe)

People get into autistic debates over what chili should not have in it (beans, tomatoes, etc), but what everyone agrees is the foundation for any good chili is the dried chili peppers.

Cut them open, remove the seeds, and then either grind them into powder or rehydrate them in some of the stock you'll later use for the chili, which you then blend into a paste. Making the chilis into powder tends to give the dish a smokier flavor, whereas rehydrating and then blending them recovers some of the original fresh/fruity flavor.

I use dried Ancho, Guajillo, Pasilla, Chipotle, New Mexican, and Arbol. The only hot ones are the Arbol, so if you're a puss you could leave those out. Adding some fresh chopped peppers (bell and poblano are mild, jalapeno, habanero and tobasco are hotter) gives a nice brightness to it as well.

As a TX chilifag who has won competitions once told me it's all about the peppers; after that, do whatever the fuck you want, no one who is really into chili could give a single shit about beans or no beans.

get as much sear on your meet as possible. I do it with ground beef - which usually comes in a rectangular brick. sear the brick on both faces. cut the brick into four long pieces and flip them on the raw faces and sear those. cut the long pieces in 2 again and flip them all on their raw faces again. at this point the now small rectangles are probably cooked through, so deglaze the pan, mash the meat up, and start adding in your other ingredients
