Does it really matter? I mean for real? It must be a meme because salt is pretty much salt. Ok, so sea salt may contain more trace elements than refined salt and Himalaya may contain even more, but it is such small amounts in something we use so little of that I can't see how it matters at all in a nutritional sense. So that leaves only taste. Does it taste better or different?

No. I believe it is the size of the grain that affects the perceived taste of salt. If you are adding any salt to a wet mixture, like a stew or a dough, where the salt will just dissolve, there will be no difference.

But if you're topping buttered toast, sea salt flakes or little himalayan chunks will be a more pleasurable and distinct experience of salt.

Whatever trace nutrients may be in special salts are vastly outweighed by the necessary iodine you get from treated table salt. You can chase some eastern mystical crap if you want, but not at the expense of something real.

Maybe. Kosher salt has medium-sized and fairly uniform crystals (or flakes that are produced by rolling or something). It's not particularly coarse, but it's more coarse than typical "table salt." Americans typically refer to larger crystals as "finishing salt" or just "coarse" salt.

The main additive that's omitted from kosher salt is iodine, which was added because iodine deficiency used to be a public health issue. It also doesn't have anti-caking agents for the reason you pointed out.

depends on surface area vs volume. Sea salt tends to flake, so it will have more contact with your tongue and saliva vs a cubic crystal of the same volume. Because of this increased surface area per crystal/flake/grain, large flake sea-salt makes a great finish or garnish, where table salt is just salty grit until it's dissolved.

Not all salts have the same amount of sodium chloride in them. That pink meme salt tastes less salty per teaspoon than table salt.
And of course there's a difference in taste, if you can't taste the difference between iodized salt and non iodized salt then you're a tastelet, you can taste the iron on Hawaiian red salt, if the salt has been smoked then of course it tastes smoky. Salt is typically a meme.

It's not to say there isn't a difference, and some dishes highlight salt (like seafood ouderves) but the difference is typically marginal and there are better ways of flavoring things.

Mineral salt is the cheapest, you use it proceduraly in curing meat or brining fish or vegetables
iodised salt tastes a bit better and is typically used as a table condiment.
Some people prefer sea salt, you can use it any way you like depending on quality
Himalayan pink salt is usually fake, I prefer it but I rarely use it because it's expensive and the difference is marginal.

You can buy mixes salt products, but those don't bear mentioning because you can add anything to salt.
Salt that has less sodium chloride means you just add more of it, you get more flavor this way but again it's typically marginal because you just just flavor regular salt.

Personally I get all my salt from pickles, fermented soya products and when I make something continental I typically use sea salt.
Most peopel consume far too much salt as the result of adding salted products or pre-make sauces- and then adding regular salt
