whats the best way to make spatzle without a spatzle maker? or should i just buy one, seems like kind of a waste though

I don't know if this will help but it may spark some ideas. I have one of these pans and just put it over the pan of water. Then I put the dough in it, kind of trying to make a thin layer. Then i took a metal spatula and scraped it along the top so the dough got pushed through the holes and fell into the water.

you don't get Spätzle but Knöpfle (same dough, but other form). The best results and the only practical way is a Spätzlepresse.

I guess its more a restaurant vs eating at home thing. Knöpfle are considered more fancy because they require more work to make, so most people will make the Spätzle with a Spätzlepresse at home because its easier.
But also there are recipes where the longer ones are better for texture reasons, e.g. Lentils with Spätzle, Spätzle mit Spinat and Zwiebelrostbraten. If you make Käsespätzle it really doesn't matter.

Use two serving spoons. One solid to scoop out the dough, and a slotted one to press the shit through. Messy, but it works well
