There's a bunch of ideas floating around. We obv eat a number of pretty much poisonous plants that we do a lot of processing to, so its not a big leap to declare they're all detrimental. Meat is on the other side of this, with basically no antinutrients so some gravitate that way. Carnivore is a good way to start an elimination diet if you want to check what gives you allergic reactions.

The truth however is that we always lived with some anti nutrients in our food and incorporated them into our own biology.

They don't. Bushmen eat raw roots and tubers and they're the closest to how ancestral humans lived off the land. Vegetables are cooked alongside grains and beans which are inedible w/o processing. That does not mean all vegetables should be cooked.

You're tunnel visioning on muh efficiency and not realizing that doesn't matter one bit. We don't use vast majority of fibrous plant calories with or without cooking. The bacteria eat most of it. We ought to eat them because we ate some analogue of them in the past and are adapted to them, not because of their energetic value. Main thing is cut most of the snacks down and learn about how much calories are in the food you like then just make a educated guess on how much your eating once you know.
I normally eat breakfast and lunch only but they are big meals and maybe some snacks to 5-6 days a week.

inuits ate fermented meat when they could (possibly also fermented fish) to maintain gut flora. mongolians had (and still do) a lot of fermented dairy and some carbs from it to maintain flora.
carnivore is useful short term to help someone with severe intestinal permeability or UC but you only risk partly sterilizing your microbiome going long term. Its what helps to keep the immune system reacting approptiately. It's a miserable time to react badly to any little trace of food that isnt pure meat and salt. Most are not going to have access to high quality fermented dairy (non pasteurized) or want to eat rotted meat.
