What's the key to McDonalds delicious "folded eggs"? I try to replicate it at home but it's not the same.

You need a very large surface area, enough that the egg can spread out as far as it can go. Once it looks almost done just fold it onto itself into a square and that's it. Like all eggs the real trick is to not overcook them.

That makes perfect sense. I must try this at the next opportunity I have, I've been trying to replicate these eggs with a small pan, of COURSE it ends up too fat and on itself, yes, marvelous!

From their website:

>Our folded eggs, like the ones on a Bacon, Egg & Cheese Biscuit, are made with liquid eggs that are pre-cooked and folded before being flash frozen by our suppliers. Once in our kitchens, they’re prepared on the grill with real butter.

So yeah, get yourself some frozen liquid egg. Actually now that I think about it, all eggs are liquid, but why does the term liquid egg sound so gross? They should be called pre-cracked eggs or some shit.

I think it just means actual beaten eggs and not dry egg powder which many restaurants, cafeterias, etc serve

also, as someone who camps out a lot dry eggs and dry milk are underrated and not that bad

What's hard about making this at home? I do it all the time.

Beat 1 or 2 eggs, butter a 12 inch pan at medium heat, and pour the eggs in. Swirl it around so you get even coverage, wait for the egg to firm up then use a spatula to fold it into a square. I like putting a little shredded cheese in the middle to make an egg cheese pocket omelette for my breakfast sandwich.

Depends on the brand. You can get decent liquid eggs through restaurant supply but most stuff in supermarkets is gonna like Egg Beaters, egg whites with food coloring.
