the main staple dish of nipponland is sushi which is literally just fish on rice
their curry is just watered soup
ramen is just inferior version of authentic Chinese noodles

Chicken katsu with curry sauce over rice, topped with diced green onion. I use the hottest blocks I can find and enrich the sauce with garlic, ginger and grate in a lot of additions (carrot, onion, potato, and apple). I usually finish seasoning at the end with some combo of worcestershire, soy, and whatever chili sauce/paste/oil is in my fridge.

Ramen is ok. Too salty most of the time and not enough meat/vegetable flavor, at least the ramens ive tried

Chicken katsu is literally just breaded fried chicken weebs obsess over, literally every country has some version of it

Sushi can be good but is massively overrated, its sad that it is equated with the best chefs and cuisines in tbe world just for raw fish and vinegared rice.

Of course I like sushi, sashimi, miso soup, ramen, but lately I've been getting into yakitori. I make it at home and grill it over charcoal, basting with the marinade. I debone thighs or drumsticks instead of using flavorless white meat. Love it.

What’s the name of the cucumber salad with the orange ginger dressing every Japanese place serves as a side?
My favorite dish is probably just chicken teriyaki. Also like tempura, katsu, shumai, and the fried rice. I hate beef negimaki and yaki soba, the negimaki might’ve been overdone or something but soba tastes like dishwater. I kind of wish my local jap place had some more options but it’s run by chinks. Also fav sushi is octopus. :)))

Two things here
1. Yakisoba isn't made with soba noodles, so if you've never had actual buckwheat soba noodles definitely try them.
2. If this place fucks up yakisoba I'm not sure I'd trust them. It's not a difficult thing to make, that's part of its appeal.

Based possible Sumo Ramen restaurant experiencer. I like their mochiko chicken curry ramen. Had to learn how to make that shit since I'll probably never experience that restaurant again. Their chicken katsu curry rice is equally as good with the ginger tsukemono and the apple honey curry.
