Great Pancit noodles, with pork shrimp and spaghetti is a gold standard. I was Navy many friends married flips. Anyone can make ok Lumpia. Pancit tho, that is make or break. Flips food is uber based. Freaking delicious. I would say often better than Jap/kor/china stuff.

My friend's mom cooked us some pretty good Filipino food before. She made really good smoked/bbq Bangus fish and it paired well with rice and chiccarones.

I tried getting bangus at a filipino fast food place and it just wasn't the same.

You've probably only met Americanized Filipinos, the Philippine's main geographical feature is a tropical jungle archipelago of more than 7000 Pacific islands, seafood is fundamental to a Filipino's diet, their cuisine had an interesting historical fusion with Spanish cuisine as well thanks to the 333 year Spanish rule. I've been to the Philippines and some good seafood dishes are fried bangus, fish ball, and tanigue (it's like ceviche). Also those tiny dried fish are good as fuck with Red Horse. I think you're talking about "Kinilaw". Raw or lightly grilled fish cooked by leaving it in a mixture of white vinegar and lime, then garnished with green and red chilis. Rings a bell? Tanigue is the name of a mackerel that is common here

Listed below is a few Filipino dishes that I personally like that has seafood
>sinigang sa miso
most of you who have had Filipino cuisine before may be already familiar with sinigang, but this particular one is a variation that has miso. It gives sinigang a more cloudy broth and a gritty texture. Salmon head and belly or steaks of milkfish is commonly used for meat, and it also has mustard leaves in place of kangkong/water spinach in this particular variation
>paksiw na isda sa sampalok
this again is a variation of another popular Filipino dish. Unlike the traditional paksiw where pieces of fish are simmered in vinegar, onions, tomatoes, and ginger, this one only replaces vinegar with water and whole tamarinds. This is really great than the traditional one if you're planning to eat this dish on its own since it is not as powerful as the traditional one and the tamarinds give it more flavour
>sinaing na tulingan
tuna mackerel wrapped in banana leaves braised in a clay pot together with pork fat, and multiple pieces of camias/bimilimbi fruit. It is braised for long hours, my neighbour said that he braises his for 14 hours
>tahong (mussel) sisig

lato is a kind of seaweed, at least that's what I can tell from my intuition. This particular dish is a seaweed salad. Really fun to eat because I can pop them like roe

Presuming you are in the Philippines or planning to travel to, there are a few fishes or particular meat that I think is worth trying out
>Bilong-Bilong/Hiwas/Tahas (Mene moonfish)
round fish, some can grow up to the size of my two hands, meat is similar to a mackerel's but is tastier
>Tawilis (Sardinella tawilis)
a sardine that is, if I recall correctly, exclusive to the Philippines. Has more bones than the ones that are canned but is edible nonetheless. We usually cook it by coating it in a batter then frying it
>Tuna bloodline
part of a tuna that I rarely see in markets probably because most butchers consider it as "waste meat". I think people see it the same way as beef liver. Strong smelling, and strong tasting. If you ever see one in the market you can try buying one since it is cheap, it usually goes around PHP 120 per Kilo. Season it with salt, lots of coarsely ground pepper, coat it with oil then sear it on a pan
>Tilapia with egg sacs
you would rarely see them being sold in markets. Had a few in the past, egg sacs are pasty when cooked, has this taste that is genuine although somewhat bitter
>Aligue (crab fat)
usually comes inside small containers, people whom I personally know use it for fried rice or seafood pasta sauce

Also, go to Capiz if you are seeking seafood, it's the seafood capital of the Philippines. Some of my relatives who had gone there told me that oyster go as cheap as PHP 1 (2 cents in burger money)
