Here in Brazil most people seem to be terrible afraid of eating organs, except for some hinterland populations that are used to eating them, probably due to food being relatively scarce there.

Not if the animal is kept in relatively good conditions. If your animal's liver is full of dangerous bacteria that can't be cooked away, then you should probably question the rest of the products from that animal.

my grandma doesnt, and i kinda like it too thanks to her. but she grew up in the pineys so she also ate raccoon and shit. i would try it. i always wanted to save the hearts after duck season and make something with that but i have few recipes that come close to making something with duck hearts

I've not met anyone who refused them out of fear, they just didn't care for the flavor. Even my grandparents who never ate any seafood or beef that was cooked less than well done for fear of food poisoning still ate liver.

In the US that's half the problem, the other half is whenever they've tried it it's invariably overcooked.

To me, the best part of a deer kill is eating the liver that day cooked to just medium. Delicious, almost sweet with a firm texture.

I like it in moderation. The taste is strong and liver is not the healthiest thing to eat.

Try Chinese spicy liver and onions. The strong taste of liver helps here. Bland meats are overpowered, living blends well.
