Good question. When I followed instructions for double frying they always came out way too brown. Finally lowered the 1st fry temp to @ 280-300F for 6 minutes then @ 320-340F for 6 minutes and it worked beautifully. They came out crispy outside and fluffy inside with that paler color. So basically lower the temp 20-30 degrees from what the typical recipes say.
