Nice. Surprised their soup only has added ginger and green onions. I think if I tried that with supermarket bought lamp in UK the flavour would be very weak because the lamb here tends to be young and lack flavour.

Chef Wang is great. His videos have unironically given me a different perspective on the Chinese. Some of his recipes use a fuckload of vegetable oil though.

The idea that "stir fries are healthy!!1!!" is a western invention. Meanwhile, chinks think oil helps bring out the flavor of aromatics. And the only cooking oils you need are peanut oil and lard. Why the fuck does the west not use lard anymore?

stir fry is healthy compared to deep frying. And you're an idiot if you think that oil doesn't bring out the flavor of aromatics. You do realize almost every culture fries aromatics in oil, right? Fucking cook-let.

Chinese cooking barely uses lard. Vegetable oil is far more common.

"Wok hei" can absolutely be achieved at home. It won't be as easy, but you can still achieve it. Typical cook-let doesn't realize that wok hei is as much a function of ingredient preparation, type of pan used, and amount of relative heat transfer as opposed to just total heat output.

Back to the fast food thread with you, cook-let. Learn to fry an egg before you type reddit-tier arguments on an actual thread about cooking.

honestly if i could pick a channel that would be easiest for a noob to follow and learn basic chinese techniques, it would be Kenji Lopez Alt. I know it sounds like bad advice, but he actually has a pretty good grasp on the basics, and his recipes are simple and accessible. These would be best for Americans. He has good substitutions too. Tahini for roasted sesame paste, spaghetti noodles instead of chinese flat wheat noodles, etc.
