Next time you order from ubereats, take a look at the taxes you're paying. If you have any discounts, you're taxed on the full amount and then the discount is applied.
If you apply the discount first and then tax the subtotal, you get a smaller number.
Uber can create a discrepancy by combining both methods, can't they? Get extra tax from the customer, but apply the discounts first in bookkeeping documents and pocket the difference

Except the receipt (of which the have to keep a copy) has the breakdown of the price, the VAT, the discount and how that applies to each other.
If they do the switcheroo the still have to deal with a legal document that says otherwise and you are in possession of that document, which is also tracked several ways ther than the email or SMS they send you
