That's only if you have various non-mainstream breeds (I forget the term used for that).
The usual commercial white chicken (Leghorn) will always lay white eggs, even if you raise them free range with all the love and care. Similarly, brown "commercial" chickens (rhode island red) will always lay light brown eggs.
There's over a dozen chicken breeds you can easily get so some little homemade coop can be pretty diverse.

Not him, I posted the blue eggs, but as I stated those heritage breeds that happy eggs uses do taste better and have amber yolks. They're the only premium egg I've had though that I could tell the difference from the lowly store brand.

Eggs can change color slightly based on the diet of the chicken, but this is not nearly as severe as the color change in different breeds. A leghorn will always lay whites, the most color you'll get is an off-white. Sussex' are typically light brown.
Flavor is most affected by the diet of the bird, I've never noticed significant taste difference between say, an Australorp and a Sussex.
