I've been looking for a sauce like this. I like my hot sauce as plain as possible.

The best hot sauces I've ever had were from Indonesian restaurants. One was like birdseye chili water, and the other was like pure habanero paste. Both of them tasted slightly fermented, and both were extremely hot. They didn't cover the flavor of the food at all, even when I added them to other non-Indonesian food.

Yo does anybody have any good ideas/recipes for processing chilli mash? I grow a lot of different peppers (greenhouse) each year and after harvest ferment as mash. After a month or so I process into sauce. I've just finished this years sauce. It was equal part aji pineapple, aji lemon drop, red habanero and red/orange scotch bonnets. After fermentation I pasteurised and thinned with 5% water, 18% pineapple puree and about 2% lemonjuice.

Last four years I grew a lot more jalapenos and some quite big peppers which were relatively mild, like anaheims and hatch. Last year I started but had limited success with the hotter bonnets and habs due to weather. Those years sauces were consumable as a condiment and went down very well.

This year the weather was great for the hot peppers and every variety that went in was many times hotter than jalapenos. Even with the pineapple puree the resulting sauce is a super hot sauce.

A tablespoon is like trying to eat a whole scotch bonnet. What do others do? I'm guessing cut it with compatible ingredients which don't have heat like carrot, bell pepper, onion, garlic, water or juice with thickeners, fruit puree etc?

I kind of like that each year the sauce is an expression of my garden with a little salt. This year the pineapple already felt like cheating. I'm guessing most commercial sauces are a few percent peppers and the rest is filler where as mine is already approx 75% pepper mash?

I guess I'm just not that interested in making random flavoured sauces. I'm more into the bulk mash.

If the only solid component is chillis then of course it's going to be as hot as they are. You need to do more to balance the flavour. Add sugar and vinegar as well. And If you need peppers to add body and calm the heat then it's not filler, it's doing the job that solves your problem.

Yes I ferment for flavour, but some of the point of fermentation is to make the sauce 'dry' as in, there isn't anything left in there to ferment. It is also about getting a pH drop so along with the salt it is preserved/stable. I do pasteurise and hot fill my bottles for additional peace of mind, but adding sugar or unfermented ingredients which are sweet kind of defeats some of the purpose of fermenting.

I need the acidity for flavour and balance, but generally dislike vinegar forward hot sauces. I prefer to adjust pH with lactic acid or phosphoric acid, have the lactic acid from fermentation and make final adjustments on the back end with lemon or lime juice and/or citric acid instead of vinegar.

You are right though. If the ingredients are basically 100% scotch bonnets it is going to taste like a scotch bonnet and if I assume they are 40 times as hot as a jalapeno and I want jalapeno levels of heat I need to dilute it 1:40 with something that isn't hot to do so.

I guess I see lots of carrot, onion, fruit puree, fruit juice, tomatos, water and xanthan gum in my future.

You don't need all these things if you're worried about altering the flavour. Carrot doesn't change it that much, but better would be just use bell peppers as they have the same qualities as chilli just without the heat. Ferment those as well if you're worried about the ph being too high.

I was a bit scared to try it, but it tastes nice and really isn't as hot as I thought it would be.

It's not just a flyover thing. My local New England chain grocery stores probably have the same major brands that yours do. Bass Pro Shop may have a few more, but those include boomer "lol burnt asshole" joke brands that are probably never intended to be consumed (at least sober). And you may find some local stores or farm stands with homemade or rebranded generic sauces--but you won't see those mentioned on the Internet. So unless you happen to live in one of a few cities with "specialty hot-sauce stores", everyone is ordering these memes online. (Inlcuding yours truly.)
