While you can certainly make nice bread with pumpernickel or rye flour, white flour will always make the best tasting bread with the best texture imo. Baking without any white flour at all makes gluten development and proper oven rise more difficult and will result in a more dense loaf. My best whole wheat and rye loaves have had around half white flour.
