We’ve been over this. Mechanical planting and harvesting kills between twenty and thirty thousand small mammals per acre, every year. Not every part of the world can be a veganic paradise. If you look at any veganic gardening commune you will find them either in california, hawaii, or florida (aka somewhere tropical with a year round growing season). Where I live the main fruits that can grow are some berries, squash (non native squash like cantaloupe and watermelon), and some stone fruits like tart cherries, peaches, plums, and apples. No citrus, and definitely no bananas.
In the winter you grow what you can, work your ass off to preserve it, and then supplement with large animals (and in my case duck eggs. Ducks, unlike chickens, will lay throughout the winter without supplemental light or heat). Livestock is a great way to process food scraps into compost, since the animals can derive nutrition from the scraps and turn it into meat, eggs, milk, and manure. To try to do polyculture regenerative ag without the magic which is animal behaviors and byproducts is like trying to create life without nucleic acid.
