tested a pumpkin pie filling recipe with winter squash puree i had in my freezer
the recipe was good
i used one more egg than called for because my puree was runny and I thought it wouldn't bind into a custardy filling. in hindsight i think it would have worked without a third egg.
graham + cookie crust made me realize i want a flaky pastry crust.
also realized I'm out of ground ginger so I'll be getting that next week. hopefully there's some left.

i also tested a mashed potato recipe today since I'm ironically not good at making them. it wasn't as exciting to take a photo of anyway.

sad this photo didn't turn out. I went and dug up some mac and cheese recipes. the revised mccall's cookbook uses mustard powder in its mac and cheese. I have a pile of american cookbooks and this pic has better homes and gardens, betty crocker, southern living, mccall's cookbook, and one of ree drummond's shitty books. I could probably find 7 or 8 other recipes if I dug around a bit more.

the best way I think to make it is to make the white roux then set it aside and then heat up milk with spices (paprika, cloves, onion, bay leaf) in it before sieving the hot milk into the cold roux. that way you avoid overcooking the roux and you can add more seasoning to the base.

Just me and the wife, we have little family very far away. I'm making a nice brunch with a massive brie en croute with apricot preserves, baked pears with candied walnuts gorgonzola and crepes with homemade lemon curd. For dinner we have a 23lb turkey that is currently brining. I'm making scratch stuffing with for the bird with plenty extra, twice baked loaded sweet potatoes with bacon and gouda, green bean casserole, roasted cauliflower. Gołąbki, and a scratch pumpkin pie. We have 2 magnums of champagne and orange juice for mimosas at brunch, and redwine plus a handle of Sobieski and cranberry juice for dinner. The tradition from previous years when I've done this sort of thing is that she gets stuffed and wasted on brunch and then I mercilessly pound every hole god drilled into her beautiful Polish frame, then I go back to cooking and she's eventually woken up to a full thanksgiving dinner before and we both consume thousands of calories and get blackout drunk and fuck and/or fight and/or vomit profusely. A few days later she cried rape and the other guy ended up going to prison for several years because somehow he was magically supposed to have known that she "withdrew consent" after her boyfriend left the room, even though she didn't say or do anything to indicate it. Appellate court upheld the rape conviction because guys are always rapists, don't'cha know.

Another case was Gary Dotson, who was named as a rapist by some slut who got pregnant by her boyfriend but didn't want to admit it to her family. Despite the rape victim recanting and admitting that she'd lied the entire time, he was still convicted and sent to prison and refused a pardon, because the criminal justice system cannot make such mistakes, don't'cha know.

Something a lot of people don't get about American appeals courts it isn't really their job to reverse trial courts on facts, but mostly on law. Don’t stuff the turkey before cooking it, it will take much longer to cook and the white meat will dry out. You can add some aromatics like onion, apple, herbs etc to the cavity but don’t stuff it to the brim.
