I work at an Italian place. We make fresh pasta and freeze it. Business is starting to pick up again, with deliveries, anyway. It's gonna be a long day, tho.

We do it all from scratch, but another line cuck rolls the dough with a machine. It's a two person operation doing so many like that.

The fillings are all ricotta based, one is chicken, another is cheese and the third is walnuts with dried apricots. I made them in advance, yes, it helps them to be firmer.
