2 cinnamon sticks
12 whole cloves
Instructions
In a medium saucepan, combine prune juice, apple juice, cinnamon sticks and cloves; bring to the boil.
Reduce heat; simmer for 15 minutes.
Remove and discard cinnamon and cloves.

I used to make something similar in the crockpot. I could have sworn it had more juices but warm prune juice is amazingly good.

I want to experiment with fermented juices as in Kambucha for some different taste than just juice but no real amounts of alcohol as wife can't have any when preggo. Maybe buy a Scoopie (the shroom which ferments Kambucha) and try it out yourself. Otherwise there is "water kefir", small transparent christals which create a nice fizzle and more complex taste while reducing sugar.

We had this in Germany, which was my favourite juice, but sadly it's not available anymore. Ingredient list says: Apple juice, grape juice, blackcurrant juice, sour cherry juice, lemon juice and natural aromas (whatever that exactly is). Because of the blackcurrant and sour cherry juice it had a slightly sour/dry taste like wine.

(no, there is no such thing as "non-alcoholic")

This recipe is for 30 people/cups/glasses.

ESSENCE
2.25 l strong red whine (3 bottles)
3.5 dl Calvados
3.5 dl vodka
3.5 dl dark rum
750 g brown sugar
50 g allspice, whole
50 g cinnamon, whole
25 g cloves, whole
25 g cardamom, whole

GARNISH
3.75 l red wine (5 bottles)
4 dl orange juice
1 kg sultana raisins
300 g almond slivers
350 ml white port wine
Orange slices (1 per serving)
Adjust the flavor with white port, dark rum and honey

PROCEDURE
Mix the red wine and spices in a pot and bring it to 65-70 C until it's steaming heavily. Kill the heat, put on a lid and leave it for a couple of hours.
Now add Calvados, vodka and dark rum, stir and then filter through a sieve.
The essence is now roughly at 30% alcohol. If you want, you can age it in a bourbon barrel at this stage, for up to 2 years.

Either way, the day before serving you need to soak the raisins and almond slivers in white port.

When making the gløgg, mix the essence 1 to 1 with the "garnish" red wine which should be lighter and at least somewhat acidic. Also add orange juice and a touch of white port. Heat to serving temp and adjust with honey and dark rum. In each glass, add almond slivers, raisins and a slice of orange before pouring in the gløgg.
