They're gorgeous up close. It's not a "stuff" it's a thing. A "tongue" of uni. Beautiful vibrant color and a really interesting texture. Maybe you have a shit palate. I grew up in the US and am a white girl but the first time I tried uni I was like 12 years old and immediately loved it. It's like a buttery custard that is sweet and tastes of the ocean

Just cuz you got it from a decent restaurant doesn't mean they didn't serve you some crap food. Most restaurants do a mediocre job on a lot of dishes pretty often. I dunno if this is rude or not, but consider asking when they received their uni. If it didn't come to the restaurant the day you are there or the day before, I'd avoid it. Some people do, most don't. I've been told by several people who do eat them that you have to soak them in milk for them to be even borderline palatable.
