The thing I've noticed, specifically with Mexican food, and even then, specifically tacos/taqueria, is that people only care how "authentic" is is, and the quality is secondary. I've been to Mexico twice, and had dozens of hispanic owned, and hispanic frequented ones, and they are always a disappointment. The meat is almost always the lowest quality most grizzly shit you can find. And for as much as people meme "white people think mayo is spicy", the meat is typically bland. They often do make fucking banging salsa though. I can usually get much better tacos from some white owned and operated hipster joint for 50 cents more per taco.
