Half of what Uncle roger says is basic fried rice making tips, the other half are his own opinions. e.g.
- No Chili jam: Personal preference, there are better sauces out there, but whatever
- No frying green onions: Absolutely wrong. You CAN fry green onion as an aromatic, more specifically the firmer whiter, trunk part, and use the greener stalks for garnish. Ever heard of scallion oil?

It could be sweet. I like pic related on fried rice, but it's more of a sauce. If it were thicker and came out of a jar, I'd call it a jam. That's exactly what's in the OP.
