How does /ck/ make their curry?

I always go for a lamb madras. Tonight I am making it as:
>lamb leg chunks
>some leftover beef mince to bulk it a bit
>shallots
>garlic
>homemade madras paste

Served with garlic rice and some buttered wilted spinach. I can't be arsed to make naan but my boyfriend loves me regardless.

>ginger
>onions
>carrots
>spices (madras, garam masala, chilli, salt)
>tomato paste

Sautee onions and carrots till onions become translucent and soft, add garlic, ginger and spices, sautee for a minute or two. After that stir in tomato paste and then red lentils that were rinsed in cold water. Add water. Cook for 20min on low heat, covered. Serve with naan or rice.

Nothing special, but it fills your belly and makes you warm.

>3 chicken breasts cubed
>2-4 russet potato cubed
>your favorite pepper for heat
>1 cup greek yogurt
>few cups of chicken stock
add chicken and brown, stir in paste and add veggies to reduce, add potatoes, yogurt, chicken stock, cover instapot and set for high heat for 8 minutes. will be as good as a curry shop but you dont get shit in your food, and it takes about 30 minutes total.
