what is the big deal about cast iron pans and why are they being shilled so much here? i mean, aren't they dangerous due to rusting? also difficult to clean due to stickiness and all.

you should take a rag and wipe out your pan when youre done with it, you fucking heathen. run some hot water over it after you wipe it out to get the rest of the oil and foodstuffs. Salt and oil with a metal scrubbie will get the charred food off the pan, but dont scrub too hard. never let it air dry. always dry it off with a clean towel.

What are you talking about? Cleaning cast iron is the easiest:

Run sink until the water is very hot
Take hot crusty CI pan off of stove
Put it under the stream of hot water while scraping with a metal spatula
Put pan back on the burner and the residual heat will dry it (electric element bros only, otherwise use paper towels or rags to dry)
Apply a thin layer of vegetable oil to pan interior.

That's kind of okay. You can also just scrape the coagulated oil in the trash, and (optional) wipe with a clean , non-soapy cloth.

If you want to really clean it, scrub it with oil and course salt and wipe it off. Just takes a few seconds.

You might not want to perpetually reheat the oil, cause it gets grimy. I use mine a few times (especially if it's something like eggs or pancakes) before cleaning. I just use the spatula to scrape whatever egg or batter is on it into the trash.

Basically, you just don't want lots of grime and crumbs sticking to your next meal. Seasoned cast iron is naturally not stick, so grime comes off really easily. A bit of grease or oil on the surface is fine and good.

I wash my cast iron and carbon steel pans vigorously with tons of soap every night and their seasoning has never been stronger. Soap destroys lipids, your seasoning is not a lipid anymore if you seasoned right. I also never re-season, if you just cook in them with enough oil their seasoning self regulates. I do avoid cooking acidic ingredients for a long time, eg I'd reach for my stainless pans for a tomato sauce-- that really does destroy the seasoning, but small amounts like vinegar seasoning is fine. The no soap thing is a total myth though, left over from the fact that soaps used to have lye in them that would destroy the seasoning. Modern soap doesn't have that.

They last a long time if they are cared for correctly. They only rust if they are put away wet or left to sit in a wet environment. They are not difficult to clean. You wash them in warm soapy water, dry them immediately, and then rub oil on them and put them in an oven for an hour. Easy. They also add iron to whatever you are cooking so if you are lacking iron, then they do help with that. I inherited several sizes of skillets and a dutch oven and I enjoy using them. My favorite cast iron pan is actually a pizza pan but I use it as a griddle and baking pan too. Le Creuset is just an enameled cast iron version of the same thing, I have those too. The only thing I don't really like to cook in them are eggs because they take on too much of the skillet's seasoning flavor. Great for a steak or piece of fish though,

If it gets rust, scrub it off and re oil for temporary solution, or look up how to cure a cast iron on youtube. Takes several hours so don't cure your pan unless its is rusty all over or mad fucked.

I like Islay single malt, I drink maybe once a month and have 2 bottles of the stuff. I don't use cast iron anymore because stainless steel is superior, cleaned my cast iron all the time with soap and water lol just put it on the burner for 3 mins after it isn't hard. I don't drink beer anymore because it's carb water, used to drink Budweiser though.

Not really. You scrape off whatever sticks with a bit of hot water, which generally comes off really easily. Then you dry it off, put a very thin layer of oil all over, and bring it up to a smoke and then you're done.
