Unless you live someplace where there are BBQ joints that are literally pulling the meat off the pit as you order, it's going to be shitty as well as expensive. There's a couple of BBQ places where I'm at, but BBQ isn't a thing. So, they smoke everything in the morning and then hold it in hotel pans all day.

are you baiting? i don't think you've ever smoked something. the smoke only lasts for a small portion of the beginning of the cooking time, to imbibe the smokey flavor. after that it's just cooking slowly. and even when it is smoking, it's very small puffs of smoke coming out, depending on how much wood you put in it. the area doesn't get smokey at all. the only way you would cough is if you put your face right up against the vent/chimney.

Smoked a rack of ribs today. First time doing it. Just a brine + dry rub, done over apple chips. Only did 2 hours in the smoker but it was more than tender enough on top of being pretty tasty and flavorful. I was quite pleased with it, being Babby's First BBQ. Maybe I'll do a brisket or pork belly next time or something.

275 seems a tad high, but still in the safety zone. I bet it turned out awesome! Depending on my wife's mood, I slow smoke between 175 and 200. Sometimes, I just can't be bothered by stupid shit.
