when i was in culinary school, one of my chefs used to go to a butcher and take all of their chicken skin that they would usually through out, fry it, and made these chicken skin chips. he said it was the most profitable thing he ever made as the ingredients were basically free.

you better have a deepfryer for the cornydogs. you might as well make fries and dress them up like nachos would be.
make your own white cheesedip for all the mexican dishes and drown that shit
make everything the same profit margin.
call it EL AMERIXICAN FOOD TRUCK and wear mini sombreros on your head
also buy quality dogs and make the best cornydogs you can. make a variation with a bunch of chopped roasted and seeded jalapenos mixed in the batter. and cover with cheesedip
good luck

Get a job in a restaurant kitchen before even considering opening up your own food truck. You clearly have no idea what you're doing or how any of this works.

I work on a food truck and tacos are easy especially meats that you can judt reheat, ie birria, carnitas, and chile verde, just throw em into a steam tray and roll. Plan how you build it out very carefully for what you are serving, the truck I work on does not have nearly enough assemblg space and I fucking hate it. Best of luck to ya.

Why so fast on calling names? all I asked is why she clarify that as it gives more insight to the question OP asked
