What blows my mind is picky eaters who hate a particular ingredient ONLY when it's pointed out to them. I bet if you gave them e.g. "plain" tomato sauce (no onion, no garlic, etc) they'd think it was bland.

1. Soak it in milk for about two hours before cooking.

2. Be extra careful not to overcook it because it ends up like leather.

OPTIONAL BUT HIGHLY RECOMMENDED: Serve with some nice caramelised onions and/or squeeze a little bit of lemon over it.

Test Kitchen (I think) tried soaking liver in water instead of milk, and they concluded that the two prep methods ar nearly indistinguishable. I haven't tried it yet, but I can imagine that it's the soaking bit that's important.

I like everything in this thread except for onions. I like raw crisp onions like on a burger, and very soft caramelized onions, but semi cooked flaccid but still crisp on the middle makes me gag and sometimes vomit if I bite it. Hate it! That's just an example of a badly cooked ingredient, though. Doesn't make you a tastelet.

I remember when I was a kid, my grandma used to make oven burgers with huge chunks of onions in them. They were EXACTLY like you described them, semi-cooked and flaccid. Thought I hated burgers well into my teenage years.

Aniseed seems to be a commonly despised ingredient. Nearly all adults I've met outside of Greece hate it.

My boss (who's also Greek) once brought a huge bag of aniseed candies after the holidays. Everyone had a bite and nearly spat them out. The bag was at the cofee area for about a month while I (and I alone) gradually wore it down. I don't even drink ouzo, and I fucking love aniseed.

Make sure the liver is fairly fresh, stale liver is difficult to cook.
1)milk soaked, cubed and breaded or floured to fry. Easy to make at home, pretty pronounced liver flavour.
2)Put onto a skewer and roasted over fire (possibly could be made in an oven). Liver contains no fat so make sure to alternate some animal fat (traditionally fat near the tail end of the animal) spice with cumin and thyme and red pepper
3)Spiced, thinly cut into large flat pieces (think döner). These are technically grilled in Thrace but it may be possible to cook it on a cast iron too.

Blog-post Incoming:

I kind of pride myself on being able to try just about anything and everything. I've tried the weirdest shit like eating maggot-processed cheese, horse steaks, grasshopper tacos and every type of raw shellfish you can think of. There are almost zero things I don't enjoy eating, but will still frequently and repeatedly try over and over again, hoping to maybe acquire a taste for them. When I was a kid, I didn't like mushrooms, but as an adult, after eating a shitload of them, i fucking love them. There are now only a handful of things that I'm still trying to enjoy but just can't. I'll continue to eat them, and maybe I'll enjoy them too someday:

>Tripe
-The texture is absolutely disgusting. It's like eating a wet sponge. The taste isn't horrible, but it's difficult to get past the texture.

>All organ meats
-Again, the texture. It's soft and jelly-like, and it all has an iron-like strong gamey taste. Almost all organ meats taste the same to me, no matter how often I try them.

>Capers
-Tiny little salt-bombs with an odd grassy flavor. To me they just taste like a plant your not supposed to eat + way too much salt. I can eat them in small amounts, but don't enjoy it.

>Cilantro
-I have the gene, fucking sue me. My girlfriend has been forcing me to eat it a lot because she's obsessed. I'm actually slowly starting to enjoy it, but it still tastes like soap.

>Nattō
-I really wanted to try it my whole life, as it seemed like something gross that I could learn to enjoy. I know it's basically rotting soybeans, but I assumed it'd taste like cheesy beans that were fermented, and tastelets were just exaggerating the severity. They weren't. It tastes like sour rotting food and has the texture of snot. Nothing good about it whatsoever.

Again, I don't avoid these foods like a child. I hate those kinds of people as much as anyone else, which is why I continue to try the few things I don't like over and over. I still need to try balut btw.

The most tender meat I've ever eaten is beef tongue, from a Mexican food truck up the road from my house. A person would never even know what it was if you sliced it up before you served it to them, and yet if you told them I imagine most people wouldn't want to even try it.

>Mushrooms taste great but I for some reason cant handle the texture if it's a major part of a dish.
I was the exact same despite remembering liking mushrooms as a kid. I went on a mushroom cooking spree to find the cause and realized my mom at some point started throwing mushrooms together with everything else so theyd end up a mushy slop a shit. Now I just cook them separately until the liquid is evaporated and the mushrooms can actually fry a bit in oil. Love em again

i love mushrooms for the most part, but i fucking despise the generally available ones.
crimini/button/white/brown etc(technically all the same species, but w/e) are absolutely unpalatable to me
all the """gourmet""" mushrooms that arent just fucking slabs of chewy shit are infinitely more enjoyable

im with him its painful. little bullshit conversations like that make me seethe.

>I don't like tomatoes
>ok cool
>i dont like them because blah blah blah
nobody asked faggot, its not interesting. unless you have a funny story as to why you wont eat something nobody gives a fuck, just say you dont like them and move on.

same with any mundane question
>how was your day
>good
>hurr why dont you give more detail
fuck off, most people dont understand what you do for work, and chances are they dont really care. unless something paticurly funny or interesting happened stop fucking talking. you don't need to make gay small talk. you can just sit in silence and enjoy each others company without talking about mundane things.

is there some condition where you cant fucking stand small talk, and talking about boring as shit topics, where youd rather be talking about something weird or funny, like who would win 100 gorillas or 20 ufc fighters. or actually going and doing something fun like jackass pranks.

am I autistic?

Nah, they have shades of violet, cos they are ripe.
