OP is talking about 'checkbacks'. These are to prevent a comped meal/low tips. You drop off a meal or drink, then 'check back' in two minutes to make sure they like it. This gives them an opportunity to complain and the restaurant an opportunity to fix it before it's too late (and a 50% bigger income statement effect). Once before meal is over to 'tie up' and see if the manager needs to fix anything so they want to come back.
