So I really like instant ramen, and I also really like Japanese food.
I've tried restaurant-quality ramen at a few different places, and every single time, I just find it extremely disappointing.
The broth is definitely better than instant, plus the additional toppings and meats are a plus.
My problem is the noodles. Every single time, the noodles seem basically indistinguishable from spaghetti pasta. I like spaghetti when it's centered aroind Italian cuisine, but I dont think it works with japanese.
Noodles from instant ramen packets have more flavor amd better texture- they're tender and chewy.
Am I just getting crappy ramen made by Chinese imposters taking shortcuts looking to make a quick buck off Americans? Or is "fresh" ramen noodles supposed to be bland and flavorless?

As much as I want to love Japanese food, I can't. Outside of Ramen and Okonomiyaki most of the food has the same flavor. It's not bad by no means but it isn't isn't on my bucket list when I think of foods to try out. Why is Japanese food taste the same?

Pretty sure instant noodles have a fuck ton of sodium and shit that keeps them from going bad too quick, and ramen restaurants use fresh(er) noodles

A lot of ramen places use noodles from big companies, I gather. Find places that make their own.
Fresh noodles also haven't been fried in oil before you get to them, which probably has something to do with it.
Good ramen noodles in good soup is infinitely better than instant.

coz they dont really eat that shit nigga. most of them eat globally common western foods like pasta, yogurts, bread etc except with miso and rice on the side. however the snacks are fucking based. if you want to eat like a real asian go to china tho bc most of the soups in japan including ramen are just shitty rip offs of chinese food

You think Japanese people don't eat Japanese foods? They eat both Asian and western foods, and a lot of fusion food they consider western because it isn't purely Japanese.
