peel them, slice them length wise and salt them lightly and let them drain for an hour

also maybe try using baby eggplants or asian eggplants, that might help with bitterness found in large/old eggplant

The reason people hate eggplants is because they have no idea how to cook them. You probably dont draw out the moisture before cooking them, so your eggplants are always undercooked, raw, damp, miscoloured and gross as shit. Youre also probably using those huge globe eggplants, which are objectively worse than their long, skinny counterparts, found more commonly in Asian cuisine. Eggplants are best roasted on an open flame, grilled skin down, or deep fried- that way you can get the full flavour out without fucking up the texture
