Dawg... Eating eggplant Parmesan really makes me miss chicken sometimes. How the fuck do people enjoy eating something with leathery skin, mildly vegetal flavor, water-logged once cooked down, and ruining it's breadcrumb crust and red sauce?

Anytime I order a sub at a pizza joint I have to tell them to overcook it as much as possible or else i'm treated to a watery fibre-y mush, peeling breadcrumbs, sandwiched between a sub roll.

You peel off the skin, cut it how you want it and throw a little bit of salt (the coarse one tend to work better but table salt works fine too) let it rest 5-10 minutes so it absorbs the water and that kinda bitter taste it has.

You peel it, slice it thin, and salt the eggplant in layers in a colander for about 30 min or so to help get the excess moisture out. Then you rinse off the salt and pat dry the eggplant. Then you batter it, and fry it in hot grease. It will absorb the oil if your grease isn’t hot enough.

That’s what I use when I make mine and it makes it so much easier and it fries up so good. I slice it very thin. So I can usually make 2 large pans of eggplant Parm with 3 eggplants. It’s a lot of frying tho but it’s worth it.

OP here. Thank you! I was wondering what the fuck I could do to infuse some flavor between salting and draining the excess eggplant water. I was thinking some mild soy sauce or coconut amino's, but that marinade makes sooooo much sense.

I make eggplant parm thats really good and its pretty easy, and its easy to not let the eggplant go mushy. To not fuck up the breading the trick is to not layer it like a lasagna like a lot of eggplant parm recipes do.

Cut eggplant into medium to thick slices, probably like 1/2 to 3/4 inch not really sure im just eyeballing it. Salt them and let the slices sit on a rack for 30 minutes to pull some water out. Toast and season a bunch of panko in a skillet til its golden (melt butter, salt, pepper, then whatevs you want, throwing it fresh thyme once its off the heat is really good). Also make a tomato sauce. I just do some butter or oil, sautee some garlic, 28 oz tin of good whole peeled tomatoes (if u can't find a brand i know is good i just look for ones that dont have any puree added in the ingredients), potato masher until consistency you want, simmer for 10-15 until desired thickness, turn off and throw in basil. Let the panko cool and mix in a shit ton of parm, wipe off eggplant, dredge then egg dip slice, coat with panko mixture, bake at like 400f for 10+ minutes or so. I usually start checking it around 10 until its a nice cooked eggplant but not too mushy (it can turn pretty quick, it can take an attempt or two to figure out exactly how you like it, ive pulled it out too early before thinking it would be nice a little firmer but it was a little undercooked.) Serve it immediately with the tomato sauce on the side or on top. As long as you dont top it and let it sit around you wont get soggy crust. You can broil some moz on top if you want but I dont bother.

Its like nice crunchy eggplant steaks and it fucking rocks.
