Yeah, I can't find octopus where I live, so I just put some cooked prawns in there instead. Called an ebiyaki. It's not quite the same but it's close enough and let's face facts, the batter is the main draw for a takoyaki anyway.

No worries. Just some advice, use come metal skewers for turning the takoyaki and cook them for longer than you think once you've got them into a ball shape. I looked up how to do it before my first try, but it's pretty easy to get right. Like I said, I did it pretty much spot on the first time I ever tried it.

The crunchy batter bit not so much. You get a lot of takoyaki without that in Japan. The ginger however is vital. That said, you can cheat a bit and use a home made version or the sushi ginger stuff shredded up. It's not exact but it's close.

Japanese food is okay, it is a very 'safe' option where the flavors are generally easy for the average person to get into (with the exception being raw fish). The curries are inferior to thai and indian. It is not easy to find a place that sells proper high quality ramen in my area. Ive been to extremely expensive japanese restaurants sponsored by business partners and it was nice, just mostly expensive fish and very beautiful presentation.

Japanese food is an acquired taste depending upon what you started with.

I grew up in the south so I was used to fat, shortening, salt, and sugar, with lots of meat and veggies smothered in meat. The first time I tried sushi, I gagged. Then I had okonomiyaki and it was delicious but also made my brain go "WTF" because I saw it being made. Fish flakes, soy syrup, mayo, a bunch of other wierd things I had never had before on a pancake but, when I tried it, it was almost like BBQ.

I didn't fall in love with Japanese food though until I had legit ramen with soy/mirin cured eggs. The fatty broth, the bits of pork, the noodles, holy shit it was so fucking good! From there, I tried everything I could get my hands on and soon learned just how much work went into Japanese food. It's labor intensive. That I think made me appreciate it, considering I tried to make it.

The Japanese half-ass nothing. Even their fucking souffle pancakes are insanely difficult to cook (took me over 10 tries to get it right). For them, nothing but picture-perfect will do.

"curry" literally means "broth"
Different places have different types of curry because they make different broths with it. Indian curry is a broth made with curry powder (which is almost entirely cumin, with other shit added in).
Thai curry is a broth made with a spicy paste.
Flavors are different because they're just different types of soup, poured over rice.

Hell, you could make a 'Cajun curry" and pour it over rice, but we just call that gumbo.
