I think I have trouble mentally processing the highs. My life has had such low lows–and I love those dearly–that I get fazed when I meet them. I just got out of a rut where I stopped caring and drank nothing but starbucks and preground crap, and learned to enjoy it for what it is. So I don't think good coffee is so good that I couldn't go back to commodity stuff if I had to.
I think a lot of shitty coffee is really just misunderstood, poorly roasted, stale, brewed incorrectly, or consumed thoughtlessly. So when we think a coffee is amazing, probably 80% of that is the care we put into selecting, making and drinking it.

Right now I set a max value my beans are supposed to hit. My control board will flip my heater on and off to regulate this value without overshooting. This is called a Set Value. My set value right now is 405f, so when my bean temperature probe hits 405, the heater cuts off. I can take this a step further by designing a background curve for the roaster to follow. Basically that takes you from a single Set Variable, to a different value every second.

I do. But there are very few of us and we probably aren't appreciated in these threads. For me, I'm pretty into coffee and don't mind investing time and money into it, but when it comes down to it, I often get so depressed and lazy so I end up losing the will to even go buy more coffee when I run out even if I have the tools to make it. So instant coffee is beautiful for me, since it's always around and even if I'm depressed, I can still turn on a kettle and pour.

Recently acquired pic related to try and to my surprise it's really damn good. I enjoy it even more than some of those high end Japanese/Korean brand instant coffees. Something about this one has a much greater body to it(it foams up unlike any other instant I've had) and it doesn't taste like day old coffee.

Extraction doesn't increase much after a few minutes of steeping unless there is agitation. The liquid near to the surface of the particles of coffee becomes quickly saturated with dissolved solids. Unless there is fresh water brought into contact with the coffee particle, very few new solids will be dissolved.

Coarse grind removes a large portion of the coffee solids from ever being in contact with water. Finer grinds will allow for more solids to be dissolved. This makes the coffee higher in concentration, and can allow for different chemicals to be in concentrations that can overpower others and to change the flavor.

Ratio is obviously important, as it will directly change concentration. As concentration increases, holding water composition constant, acid levels will begin to overwhelm the alkalinity present in the water and become more prominent flavor wise. Our ability to taste is also affected by concentration, where we lose some precision in our ability to taste at higher concentration, some other factors can dominate. There is also the matter of body increasing primarily with concentration as well.

The most important factors are turbulence and surface area, as far as extraction is concerned.

Eh those fucks often over extract, especially if it's preground stuff. Ideally you have a grinder and can grind a little coarser than the usual "expresso" grind. Technique is important too, use boiling water, fill the basket up without tamping, medium/medium high heat(preheat if electric), lower the temp once it starts pouring and try to get a steady rapid stream, remove from heat at the first gurgling sound and either cool down the pot with cold water or pour immediately. I like medium roasts in them, sometimes light ones, i'd avoid darker roasts cause they over extract easily.

You CAN do that. But generally it's done in a larger batch with a medium grind. If you want to do it at home, I'd suggest getting a 1L french press, grind 60g of coffee to medium-coarse, brew it as you would, but stick it in the fridge overnight. You could buy a french press. They get a bad wrap, because they are the first port of call for people looking to get "better" at coffee. They can even be used for cold brew to. You'll generally use 6g of coffee for every 100ml of water in a french press.
If you want to be a bit more adventurous, you could look at getting an aeropress. The only downside being that you can only brew about 230ml at a time.

yes. if you have good decaff beans then you can make good espresso with them. I've enjoyed some swiss water and co2 process decaff

Just came back from Van in march. There is some damn good coffee in that city.
Pallet, Rooftop, Parallel 49, Timber train and C41 in North Vancouver have great beans.
In terms of the chains, Cafe Artigiano have great decaf beans and Bean around the world have some really good single origin stuff. Barney runs Bean with his son and they've been roasting coffee by hand for nearly 30 years. Try out their Kenyan AA. The bean roastery is down by Phibs Exchange, across the train lines in the industrial estate, you can buy there, online or in one of the chain stores.

If you're looking for something a little more "International" visit Revolver on Cambie Street and Nemisis on Hastings, they're both around the corner from each other, they get beans in from all around the world, have them on special and rotate them every few weeks. There's also a Nemisis in North Van next door to the Quayside market/Seabus terminal.

Started off as a barista there in Dublin. The coffee is...alright. A bit over roasted, but they do everything manually and teach their baristas how to grind and dose.
Out of the unholy alliance of shit retail coffee in Ireland, they are the best of the worst.

It could be your machine, just like commercial espresso bars, they too need to be cleaned every now and then. Flush it out every time you use it and try using softer water. You can get descaling agents to clean the insides of the machine too. After that, I suppose the only thing you can do is time the shots and try to introduce some more consistency to each brew.

Stocked up on coffee recently. Got some kaaldi's highlander grog(I don't usually drink flavored coffee but I live in a house full of females & it's the only shit they will drink, it's pretty good though It's the only flavored shit I drink) but now I'm drinking Thomas coffee(local brand of costa rican & columbian caturra) paired with cigarettes & a book(the patrician choice for breakfast). Can't complain RN, I'm comfy & life is breetty good.
