The best food in every culture is evolved from subsistence food made by peasants. They had cheap/perishable/leftover ingredients and invented ways to make them palatable. Korea has kimchi, France has cheese, South Asia has curry, IPA was invented because it keeps on long ship journeys to India, refried beans are the most calorific way to eat beans.
