I like the one pan ones. Cook the Mac with just barely enough water to have some left over when it's done cooking. Then add some evaporated milk and grated cheese. Pasta water emulsifiers the milk and cheese so it ends up smooth and luxurious with very little mess. Add some mustard powder if you wanna be extra based.

1/4 cup flour
1/4 cup butter
1 tbsp mustard powder
2 cups milk
12 oz grated cheddar
salt and pepper to taste
8 oz cooked macaroni, any small shape you want

Melt butter over medium heat, add flour and mustard powder and cook for one minute, slowly stir in milk. Bring to a simmer while constantly stirring and let it thicken. When thickened turn heat to low and add cheese once it stops bubbling. Don't let it boil with cheese in it or it'll break the sauce. Salt and pepper to taste. Add macaroni.

Can pour it into an 8x8 baking dish and bake at 350F if you want the top browned. Could also add a little more grated cheese on top, or 1/2 cup breadcrumbs mixed with 2 tbsp butter if you want a crispy topping. I like it with steamed broccoli and green onion mixed in too.

Most recipes don't use enough cheese and the mustard powder doesn't make it taste like mustard but still gives it a certain flavor that you'll notice is missing otherwise once you make it with mustard regularly.

Welsh rabbit is better than mac and cheese though.

i like this method except theres no reason you cant just boil the pasta in milk to begin with. it wont burn or split as long as you start in a cold pan so the milk heats up slowly and stir a few times. eliminates the need for a roux, an extra pan, a waste of flour, and a sometimes blander sauce. bechamel/mornay is a great sauce but simply isnt the best method for mac and cheese.
